Getariako Txakolina

From rustic drink to icon of our gastronomy

Three decades ago, txakoli was dismissed as a rustic, acidic drink of little interest. Today it has become a leading ambassador of our gastronomy: a white wine of elegant freshness that has won over the most demanding tables in the world. Exploring the wineries of Aia, Zarautz, Getaria and Hondarribia will reveal the secrets of this young, fruity wine, on a delicious journey through the coastal landscape.

Production under the Getariako Txakolina designation of origin is concentrated in the coastal towns of Gipuzkoa, with over 433 hectares of vineyards. The white Ondarrabi Zuri grape is the predominant variety. It's a young, fruity wine with a moderate alcohol content of between 9.5% and 11.5%, a pale yellow colour and intense aromas of citrus, herbs and flowers. It's best served chilled and "broken" as it's poured into the glass, to release its full range of aromas.

It was originally made by hand in the farmhouses, and documents confirm it was traded from at least the early 16th century. The harvest takes place in late September or early October. It's an excellent partner for fish and seafood, and is best enjoyed with salted anchovies and bonito in oil – the snacks producers serve during their tours.
